Black salt, Kala namak or Bire noon is a rock salt variety with a unique salty and pungent aroma, extensively used in South Asia. Since it is mostly found in the Himalayas of Nepal, it is also called by the name “Himalayan black salt”. Black salt in whole crystals has a brownish pink to dark violet colour and rages from purple to pink when powdered. South Asian cuisines of Nepal, India, Bengladesh and Pakistan make use of this salt in making chaats, salads, chutneys and other Indian snacks. In Ayurveda, Kala namak is considered as a cooling spice and is used as a laxative and digestive aid.
